Grilling sausages:
Follow cooking time on package or ask the butcher for instructions.
Fully cooked and/or smoked sausages require less cooking time.
If you are cooking on the grill, use a medium to medium high heat. You don't want the sausages to burn, or even worse, totally explode.
Char marks are good, a little splitting isn't bad, but you don't want to lose all the juices.
I softened some onions in a fry pan with a little butter as a condiment. Red, green and yellow peppers would also be very good.
The bean and corn salad I used as a side dish can be found under Cameron Diaz's Cuban style salad.
Enjoy!
