4 beef cube steaks (4 or 5 oz.)
1 egg
1 tbs milk or water
1/2 cup italian seasoned bread crumbs
1/2 cup panko bread crumbs
1 tsp dry rub seasoning (see below)
1/2 tsp kosher salt
Fresh ground pepper
4 Tbs vegetable or olive oil
3 Tbs chopped parsley
3 Tbs grated romano or parmesan cheese
Dry Rub Seasoning-- combine the following:
3 Tbs paprika 2 Tbs plus 1 tsp kosher salt 2 Tbs garlic powder 1 Tbs black pepper 1 Tbs onion powder 1 Tbs cayenne pepper 1 Tbs dried leaf oregano 1 Tbs dried leaf thyme
(This recipe only uses 1 tsp of the dry rub seasoning. Store the rest in an airtight container)
Place cube steaks, one at a time, between plastic wrap and pound out to about a 1/4 inch thick each. Salt and pepper both sides.
Beat egg and milk slightly in a flat dish (thick paper plates work well) and season with half of the dry rub mixture.
Combine bread crumbs in another flat dish, add remaining dry rub and mix .
Place cube steak in egg dish and turn to coat.
Remove and place in dish of bread crumbs. Turn and coat completely. Repeat process with remaining steaks.
Over medium high heat, Heat oil in a ten or twelve inch, non stick, frying/saute pan.
Cook 3 or 4 minutes per side.
Remove and garnish with cheese and parsley.
Chopped tomatoes or tomato sauce also make a nice garnish.
