1/3 CUP VIRGIN OLIVE OIL
1/4 CUP PARSLEY, CHOPPED
2 TBSP BASIL, CHOPPED
2 TBSP MINT, CHOPPED
1 TBSP CAPERS, RINSED
1 GARLIC CLOVE, MINCED
1/2 TSP CRUSHED RED PEPPER
1/2 TSP GROUND BLACK PEPPER
KOSHER OR SEA SALT TO TASTE
1 LB ZITI PASTA
1/4 CUP ROMANO GRATED


PREPARE IN A LARGE PASTA SERVING BOWL
WHILE ZITI PASTA IS COOKING TO AL DENTE (ABOUT 8 OR 9 MINUTES), PUT ALL OF THE INGREDIENTS, EXCEPT THE CHEESE INTO THE SERVING BOWL.
DRAIN PASTA, PUT IN BOWL, AND TOSS.
ADD CHEESE AND TOSS AGAIN. IT'S READY TO SERVE.
