Spice recipes by Heather Marks at Heathers Heat and Flavor
Smoked Spanish Paprika Sprinkle on top of Deviled Eggs, also good in soups, pasta & potato salads, chicken paprikash, or an ingredient in a steak or rib rub, sprinkle on garlic bread
Grains of Paradise Broiled Asparagus, good as a substitute for peppercorn
Arrange Asparagus on a baking sheet. Rub asparagus with a little olive oil. Sprinkle with some sea salt and ground Grains of Paradise. Broil for 3 to 4 minutes.
Herbes de Provence Baked Butternut Squash, great in salads, as a seasoning for fish or chicken
Cut squash in half and scrape out seeds. Coat cut surfaces with olive oil. Sprinkle with Herbes de Provence. Place cut-side-down on a baking sheet. Bake at 400 for 30 to 40 minutes, it is ready when a skewer or toothpick can be easily inserted and removed from the squash.
Chile Powder Tex-Mex Corn Salad, Black Bean Salsa Chili, also good to spice up pasta or potato salads and add Southwest flavor to an omelet
Tex-Mex Corn Salad
Cook 1 small bag of corn kernels (1 and a half to 2 cups). Add one fourth cup Baconnaise (bacon-flavored mayonnaise), one fourth cup diced cherry tomatoes, 2 teaspoons Nellie & Joe's Key Lime juice, 2 teaspoons of Brian's Chili Powder (medium heat), and 2 Tablespoons grated or shredded Parmesan, Romano or Asiago cheese. Mix and serve chilled. You can also do a variation with corn on the cob. Just put out small bowls of the mayonnaise, grated parmesan and chile powder with a small spoon, and lime wedges. People can slather the mayo and sprinkle the other ingredients directly on the cob.
Black Bean Salsa Chile Brown 1 lb. ground turkey with 1 Tablespoon Brian's Chili Powder (medium heat). Add one 26 oz. can of diced tomatoes and one 32 oz. jar of Cherith Valley Black Bean Salsa. Heat until warm. Serve with sour cream and grated Monterey Jack cheese. We like to add a dash of hot sauce to our own bowls!
Crystallized Ginger Chocolate-Ginger Chip Cookies (yummy treat, settles the stomach, fun for baking or decorating apple pie or carrot cake, mix chopped crystallized ginger with soft serve ice cream or custard).
Follow the recipe on the bag of chocolate chips -- you all know the one! Mix in 1/4 cup finely diced crystallized ginger. Bake as directed. For a more bold flavor, dice the ginger in chunks about the size of the chips. For more subtle ginger flavor throughout, dice it more finely.
