Lobster Cognac Sauce

12 lobster bodies or shells from lobsters 1 cup cut carrots 1 cup onions 1/3 cup garlic 4 qts heavy cream 2 tbsp tomato paste 4 cups chopped tomato 3 cups cognac or brandy

sweat veggies and lobster tails and deglaze with tomato paste and cognac.

Add your cream and chopped tomato and reduce by 2/3

Adjust seasoning with salt and pepper....
